Well, here I am again, finding myself craving a cookie after dinner, but without the stamina (or room) to make an entire batch. And I didn’t want the regular standby chocolate chip cookie either, which is surprising. I wanted a big, soft, sugar cookie. This is rare for me, so I don’t even have a favorite recipe on hand for times like these, which usually freaks me out. SO many sites to sift through to find the perfect one… But I searched and searched, and came across a recipe from SparkPeople.com. It wasn’t exactly what I was craving…..so I changed it!

2 tbsp all purpose flour

1 heaping tbsp white sugar

1/4 tsp baking powder

pinch of salt

2 tsp butter (softened or melted)

1/2 tbsp milk

1/4 tsp vanilla

Preheat the oven to 350 degrees. Mix together the flour, baking powder, salt and sugar. Add in the butter, and cream together. Add both the milk and vanilla and stir well. Pour onto greased (or non stick) baking sheet, top with sugar, cinnamon sugar, or sprinkles, and bake for 15 minutes or until edges are golden brown. ENJOY!

This little goodie is about 185 calories, single serving and ready in about 25 minutes. Dessert cannot be easier!
